How to calculate the amount of sugar needed for wine?
To reach your desired alcohol content in wine, you can calculate the necessary sugar amount. 17 grams of sugar per 1 liter of must increases the alcohol by 1%.
For instance, to obtain 20 liters of wine at 12% ABV:
17 g × 20 L × 12% = 4080 g of sugar
Keep in mind to consider the natural sugars found in the fruit you are using.
Additionally, knowing the initial sugar concentration in the must allows for easy estimation of the final alcohol content.
